Vegan Stuffed Mushrooms


16 large mushrooms
1 cup cooked quinoa
1/2 cup finely chopped onions
1/2 cup finely chopped red bell pepper
2 garlic cloves (chopped)
1 tablespoon olive oil
1/4 cup bread crumbs
1/4 cup chopped fresh parsley
1 teaspoon dried oregano
salt and pepper to taste


A. Preheat oven to 375°F (190°C).
B. Remove stems from mushrooms and finely chop.
C. Heat olive oil in a pan over medium heat. Add chopped mushroom stalks, onions, red peppers, and garlic. Cook until tender.
D. In a bowl, combine cooked quinoa, cooked vegetable mixture, bread crumbs, parsley, oregano, salt and pepper. Mix well.
e. Fill each mushroom cap with the quinoa mixture and place on a baking sheet.
F. Bake in preheated oven for about 15-20 minutes or until mushrooms are tender and lightly browned on top. G. Serve warm.
